Ingredients

  • 3 tsp vegetable broth
  • 1 lrg onion, minced
  • 4 x cloves garlic, chopped
  • 6 c. cooked kidney beans, rinsed and liquid removed
  • 2 c. water
  • 3 Tbsp. chili pwdr
  • 2 tsp grnd cumin
  • 4 tsp prepared mustard
  • 1 pch cayenne
  • 3 Tbsp. soy sauce
  • 4 c. cooked sweet potatoes, mashed
  • 12 x 10 inch flour tortillas, warmed
  • 8 ounce shredded Cheddar cheese, or possibly equivalent

Method

  • 1.
  • Preheat oven to 350 degrees F (175 degrees C).
  • 2.
  • Heat oil in a medium skillet.
  • Saute/fry onion and garlic till soft.
  • Add in the beans and mash.
  • 3.
  • Gradually stir in the water and heat till hot.
  • Remove from the heat and stir in the chili pwdr, cumin, mustard, cayenne pepper and soy sauce.
  • 4.
  • Divide bean mix and mashed sweet potatoes proportionately between the hot flour tortillas.
  • Top with cheese.
  • Fold up tortillas burrito style.
  • Bake at 350 degrees F (175 degrees C) for 12 min.
