Ingredients

  • 2 sticks butter, softened,
  • 2 tsps stevia powder,
  • 15 drops stevia liquid,
  • 5 eggs, room temperature,
  • 2 cups almond flour,
  • 1 tsp baking powder,
  • 1 tsp lemon extract,
  • 1 tsp vanilla extract

Method

  • 1. Cream butter and stevias well. Add eggs one at a time, beating well after each. Mix almond flour with baking powder, and then add a little at a time to the egg mixture, beating as you do so. Add lemon and vanilla extracts.
  • 2. Pour mixture into a greased, 9-in square pan. Bake at 350 for 45-50 minutes.
  • For a creamier cake, use 1 stick of butter and 1/2 cup of softened, full fat cream cheese.
