Ingredients

  • 2 lrg Large eggs
  • 16 ounce softened cream cheese
  • 2 Tbsp. lowfat milk
  • 1/3 c. sugar
  • 1 c. vanilla wafer crumbs
  • 1/4 c. melted butter or possibly margarine
  • 1/2 c. toasted macadamia nuts
  • 8 1/2 ounce crushed pineapple (drain juice from can)
  • 1 x kiwi, peeled and sliced

Method

  • Combine crumbs and margarine and press onto bottom of 9-inch spring form pan.
  • Bake at 350 degrees for approximately 10 min.
  • Combine cream cheese, sugar and lowfat milk.
  • Mix at medium speed on electric mixer till well blended.
  • Add in Large eggs, one at a time, mixing well well after each addition.
  • Stir in nuts; pour over crust.
  • Bake at 350 degrees for approximately 45 min.
  • Loosen cake from rim of pan but let cold before removing rim.
  • Refrigerateand top with sliced kiwi before serving.
