Ingredients

  • 3 to 4 lb. roast (chuck or sirloin)
  • 1 pkg. Lipton onion soup mix
  • 1 can beer
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. white pepper (preferred)
  • 1 whole chicken (3 1/2 to 4 lb.)
  • 1 (12 oz.) can beer

Method

  • In small cup, combine chili powder, cumin, salt, sugar, cayenne and pepper. Rub evenly over outside and in cavities of chicken. If desired, rub some under skin over breasts and legs. Cover and refrigerate up to 24 hours.
