Ingredients
- 3 lrg onions
- 4 lrg carrots
- 3 x potatoes
- 1/4 x white cabbage
- 1/4 c. oil
- 1 head garlic
- 1/2 tsp grnd ginger
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1 tsp salt
- 4 c. water
Method
- This recipe is common to the Ethiopian Jews (Phalashi).
- My understanding is which these are NOT unique to them.
- Peel all vegetables , cut into small cubes.
- peel and mash the garlic.
- Heat oil in a large pan and add in vegetables.
- cover and saute/fry 2-3 min.
- Add in the ginger, turmeric, pepper and salt and mix well.
- Add in the water , stir and cook over very low flame for 30-40 min.
- Serve warm.
- Yield: 8 servings
