Ingredients

  • 2- 9" uncooked pie crusts
  • 1/2 C Sugar
  • 1/2 C. water
  • 3 T. honey
  • 3 T. lemon juice
  • 1 t. cinnamon
  • 8 large granny smith apples,peeled, cored & sliced
  • 1 1/2 C. cranberries
  • 2 T. unsalted butter

Method

  • Prepare pie dough & place in the refrigerator
  • In large pan combine sugar,water,honey,juice,& cinnamon & cook stirring until sugar dissolves add apple slices.
  • Simmer until apples begin to soften(5-7 min). Using a slotted spoon transfer apples to a bowl. Add the cranberries to the liquid & simmer until they pop about 2 minutes. With slotted spoon transfer to bowl with apples. Increase heat and boil liquid until slightly thickened spoon over fruit. Pre heat oven to 400 degrees. divide dough in half. roll each out into a 12" round . Divide apple mixture among 2- 9" pans. dot with butter. Lay crust on top tucking in the sides. Place in oven and turn heat to 350 degrees. Bake 35-40 minutes or until nice & golden brown.Cool to luke warm & then invert on serving plate and serve with vanilla ice cream.
