Ingredients
- 6 c. quartered, unpeeled small red potatoes (30 oz.)
- 6 Tbsp. light mayonnaise
- 2 Tbsp. mustard
- 8 slices bacon, crisply cooked and crumbled
- 1/4 c. chopped chives or sliced green onions
Method
- Add potatoes to boiling water.
- Cook 14 minutes or until tender.
- Drain.
- Mix mayonnaise and mustard in large bowl.
- Add potatoes, bacon and chives or onions.
- Mix lightly and refrigerate.
- Makes 6 servings.
