Ingredients

  • 4 apples (Pink lady or lady Williams)
  • 250 ml dessert wine
  • 1 cinnamon stick
  • 14 cup brown sugar
  • 250 g cream cheese spread
  • 12 cup milk
  • 2 tablespoons caster sugar
  • 1 vanilla bean, split
  • 1 tablespoon custard powder, blended with
  • 1 tablespoon milk, to form a paste
  • 1 teaspoon arrowroot

Method

  • CUT apples into three slices, place into a large shallow baking dish with the wine and cinnamon.
  • Sprinkle over the brown sugar.
  • Bake at 180C for 20 minutes until tender.
  • Spooning the syrup over the apples occasionally.
  • WHISK together the cream cheese and milk.
  • Heat in a saucepan.
  • Add sugar, vanilla bean and custard powder paste.
  • Bring to the boil, stirring until thickened.
  • REMOVE apples from syrup, and keep warm.
  • Pour syrup into a small saucepan.
  • Combine arrowroot with some of the syrup to form a paste.
  • Add to saucepan, and simmer until thickened.
  • Serve apple slices with syrup and custard.
