Ingredients
- 4 large firm ripe tomatoes
- 3/4 tsp. sugar
- 2 c. finely grated dry French breadcrumbs
- 4 Tbsp. melted butter or margarine
- 1 clove garlic
- 2 green onions, minced or 2 Tbsp. minced chives
- 1 tsp. dried oregano, crushed
- salt and pepper to taste
Method
- Cut tomatoes in half.
- Salt each half lightly and sprinkle with a pinch of sugar.
- Combine breadcrumbs, melted butter, garlic, green onion, oregano, salt and pepper.
- Mound over tomato halves, place under broiler just until golden on top, then bake at 350° for about 20 minutes, just until tomatoes are done but not collapsed.
- Yields 8 servings.
