Ingredients

  • 4 large firm ripe tomatoes
  • 3/4 tsp. sugar
  • 2 c. finely grated dry French breadcrumbs
  • 4 Tbsp. melted butter or margarine
  • 1 clove garlic
  • 2 green onions, minced or 2 Tbsp. minced chives
  • 1 tsp. dried oregano, crushed
  • salt and pepper to taste

Method

  • Cut tomatoes in half.
  • Salt each half lightly and sprinkle with a pinch of sugar.
  • Combine breadcrumbs, melted butter, garlic, green onion, oregano, salt and pepper.
  • Mound over tomato halves, place under broiler just until golden on top, then bake at 350° for about 20 minutes, just until tomatoes are done but not collapsed.
  • Yields 8 servings.
