Ingredients

  • 2 c. all-purpose flour
  • 1/4 c. granulated sugar replacement
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. whole bran cereal
  • 1/2 c. skim milk
  • 1 c. ripe banana (about 3), mashed
  • 1/3 c. Mazola corn oil
  • 1 egg, lightly beaten

Method

  • In a small bowl, stir together flour, sugar replacement, baking powder and salt.
  • In medium bowl, stir together cereal and milk.
  • Let stand 1 to 2 minutes or until cereal softens.
  • Stir in bananas, oil and egg until well mixed.
  • Stir in flour mixture just until blended.
  • Turn into a greased and floured mixture just until blended.
  • Turn into a greased and floured 8 x 4 x 2-inch pan. Bake at 350° for 1 hour or until cake tester comes out clean. Cool in pan for 10 minutes.
  • Remove from pan.
  • Cool completely on wire rack.
  • Yields 1 loaf, 16 slices.
