Ingredients

  • 2/3 C sugar
  • 1/4 C flour
  • 1/4 tsp salt
  • Combine and set aside.
  • 2 C milk
  • 2 large egss (beaten)
  • 3 T unsalted butter cut into peices
  • 1 tsp vanilla extract
  • One 9 inch baked pie crust
  • 3 ripe bananas
  • 2 tsp lemon juice

Method

  • Heat milk to a simmer over medium heat in heavy saucepan. Gradually whisk in sugar mixture. Add eggs, whisking constantly. Heat custard to boil over med. heat until mixture thickens 6-8 minutes. Reduce heat to low and simmer 4 minutes whisking constantly. Remove from head, add butter and whisk until melted, add vanilla. Pour custard in bowl, cover w/ waxed paper. Chill until completely cool. Turn into pie crust with bananas. Serve with whipped cream.
