Ingredients

  • 1/2 c. margarine softened
  • 4 x bananas mashed
  • 2 x egg whites whipped
  • 2 tsp vanilla
  • 2 1/2 c. rolled oats uncooked
  • 2 c. unbleached flour
  • 1 c. brown sugar packed
  • 1 tsp baking soda
  • 1 c. semisweet chocolate chips
  • 2 c. low-fat vanilla ice cream softened
  • 1/2 c. fat-free caramel topping

Method

  • Preheat oven to 350.
  • In a mixing bowl, combine margarine, bananas, egg whites, and vanilla.
  • In another mixing bowl, combine rolled oats, flour, sugar, baking soda, and chocolate chips.
  • Mix dry ingredients with wet ingredients just till moistened.
  • Drop dough by 1/4 measuring cupfuls ontounprepared baking sheet, about 3" apart.
  • Spread dough to 3 1/2" in diameter.
  • Bake for 14 min or possibly till lightly browned.
  • Cold 1 minute on baking sheet and remove to wire rack.
  • Serving Ideas : To serve, top each cookie a scoop of ice cream & topping.
