- 1 tablespoon oil
- 2 onions peeled and finely diced
- 1 clove garlic peeled and finely chopped
- 1 1/4 pounds ground beef
- 1 pinch cayenne pepper
- 15 ounces chopped tomatoes
- 2 tomatoes diced
- 1/4 bunch fresh thyme chopped + extra to garnish
- 1/4 bunch fresh rosemary chopped
- 4 carrots peeled and sliced
- 1 zucchini cubed
- 1/4 pound feta cheese crumbled
- 3 tablespoons low fat plain yogurt
- 2 slices rye bread
Method
- Preheat oven to 325°F. For bolognese sauce, heat oil in a pan and saute onions, garlic and ground beef. Add cayenne and season to taste. Add canned tomatoes and simmer. Add fresh tomatoes and chopped herbs.
- Meanwhile, cook carrots and zucchini in boiling salted water for 3-5 mins. Mix with bolognese sauce and transfer to a baking dish. Mix feta and yogurt until creamy then pour over top and bake for 20 mins. Serve garnished with thyme and rye bread on the side.
