Ingredients

  • 1 1/2 lb. stew beef (1-inch cubes)
  • 8 oz. diced bacon
  • 2 large sliced onions
  • 1 or 2 chopped leeks (including some of the green part)
  • 1 pt. beer
  • flour, salt, pepper and mixed salad herbs
  • 1 lb. chopped carrots
  • chopped parsley (optional)

Method

  • Fry bacon pieces in large pan.
  • Leave bacon in pan.
  • Add beef and brown in bacon drippings.
  • Add onion and leeks and lightly brown.
  • Stir in a little flour.
  • Add beer, stirring constantly. If necessary, add water to cover meat.
  • Season with salt, pepper and mixed salad herbs.
  • Add carrots and bring to a boil.
  • Simmer gently for 2 1/2 hours or until beef is tender.
  • (Can be cooked in a moderate oven, 350°, in covered dish for 2 1/2 hours.)
  • Serve with mashed potatoes or noodles.
  • Sprinkle with chopped parsley (optional).
