Ingredients

  • 1 (1 lb.) can sliced or diced beets
  • 1 tsp. cornstarch
  • 3 Tbsp. orange marmalade
  • 1 Tbsp. vinegar
  • 1/4 tsp. salt
  • 1 Tbsp. butter or margarine

Method

  • Drain beets, reserving 1/3 cup liquid.
  • In medium saucepan, gradually stir reserved beet liquid into cornstarch to make a smooth mixture. Add orange marmalade, vinegar and salt. Cook over low heat, stirring constantly, until mixture thickens and comes to a boil. Add butter and stir until melted.
  • Add beets and stir gently over low heat until evenly glazed and heated through. Makes 3 to 4 servings.
