Ingredients

  • 1 large onion
  • 7 medium potatoes diced
  • 2 tbsp parsley
  • 1 clove garlic
  • 1 cup Bob's red hill potao flour
  • 3 tbsp vegetable oil

Method

  • Put all ingredients except for the potato flour in the blender.
  • Blend
  • Pour mix into a bowl mix in flour.
  • You may add a little more flour if it needs to be thickened some more.
  • Put skillet on stove with vegetable oil
  • Using a ice cream dipper scoop the mixture in to the skillet.
  • Flatten the mixture with a spatula to get a thinner potato cake
  • Flip the cake cook until golden Brown on both sides
  • Serve add salt to taste
