Ingredients
- 2 c. sifted all-purpose flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/3 c. soft shortening
- 3/4 c. sugar
- 1 egg, unbeaten
- 1 tsp. vanilla
- 1/2 c. milk
- 1 1/2 c. fresh blueberries
Method
- Preheat oven to 375°.
- Grease well a 9 x 9 x 1 3/4-inch baking pan.
- Sift flour with baking powder and salt and set aside.
- In medium bowl, with mixer at high speed, beat shortening, sugar, egg and vanilla until well blended.
- Add milk; blend at low speed until combined.
- Add flour mixture and beat one minute longer.
- With rubber scraper, gently fold in blueberries.
- Turn batter into pan. Bake 30 minutes.
- Cool slightly.
- Good warm or cold.
- (If you use an 8 x 8-inch pan, bake a little longer.)
