Ingredients

  • 2 c. sifted all-purpose flour
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 c. soft shortening
  • 3/4 c. sugar
  • 1 egg, unbeaten
  • 1 tsp. vanilla
  • 1/2 c. milk
  • 1 1/2 c. fresh blueberries

Method

  • Preheat oven to 375°.
  • Grease well a 9 x 9 x 1 3/4-inch baking pan.
  • Sift flour with baking powder and salt and set aside.
  • In medium bowl, with mixer at high speed, beat shortening, sugar, egg and vanilla until well blended.
  • Add milk; blend at low speed until combined.
  • Add flour mixture and beat one minute longer.
  • With rubber scraper, gently fold in blueberries.
  • Turn batter into pan. Bake 30 minutes.
  • Cool slightly.
  • Good warm or cold.
  • (If you use an 8 x 8-inch pan, bake a little longer.)
