Ingredients
- 2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 2 large eggs
- 1 c. milk or cream
- 2/3 c. brown sugar
- 4 to 8 Tbsp. melted butter
- 1 tsp. vanilla
- 1 1/2 c. blueberries, fresh or frozen
Method
- Whisk together thoroughly flour, baking powder, salt and nutmeg in a large bowl then set aside.
- Whisk together in another bowl the remaining ingredients except blueberries and add to the flour mixture.
- Mix just until moistened.
- Batter should not be smooth.
- Fold in 1 1/2 c. fresh or frozen blueberries.
- Divide the batter among the paper muffin cups.
- Sprinkle with cinnamon sugar. Bake at 400° for 12 to 15 minutes.
