Ingredients

  • 2 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 2 large eggs
  • 1 c. milk or cream
  • 2/3 c. brown sugar
  • 4 to 8 Tbsp. melted butter
  • 1 tsp. vanilla
  • 1 1/2 c. blueberries, fresh or frozen

Method

  • Whisk together thoroughly flour, baking powder, salt and nutmeg in a large bowl then set aside.
  • Whisk together in another bowl the remaining ingredients except blueberries and add to the flour mixture.
  • Mix just until moistened.
  • Batter should not be smooth.
  • Fold in 1 1/2 c. fresh or frozen blueberries.
  • Divide the batter among the paper muffin cups.
  • Sprinkle with cinnamon sugar. Bake at 400° for 12 to 15 minutes.
