Ingredients
- 1 large head broccoli or 2 (10 oz.) pkg. frozen broccoli, cooked and drained
- 4 oz. mushrooms, drained (saving liquid)
- 2 Tbsp. butter
- 1/2 c. chopped onion
- 2 cans mushroom soup
- 2 c. cooked rice
- 10 oz. pkg. Velveeta cheese (1/3 of a 2 lb. box)
Method
- Saute in butter the onion and mushrooms until tender.
- Add mushroom liquid to make 1/2 cup.
- Add water or milk.
- Add soup and rice with cheese.
- Cook, stirring constantly, until cheese is melted.
- Pour cheese mixture over broccoli.
- Cover with crushed Ritz crackers and melted butter, mixed.
- Sprinkle over top of casserole.
- Bake at 350° for 20 to 30 minutes.
