Ingredients

  • 1 large head broccoli or 2 (10 oz.) pkg. frozen broccoli, cooked and drained
  • 4 oz. mushrooms, drained (saving liquid)
  • 2 Tbsp. butter
  • 1/2 c. chopped onion
  • 2 cans mushroom soup
  • 2 c. cooked rice
  • 10 oz. pkg. Velveeta cheese (1/3 of a 2 lb. box)

Method

  • Saute in butter the onion and mushrooms until tender.
  • Add mushroom liquid to make 1/2 cup.
  • Add water or milk.
  • Add soup and rice with cheese.
  • Cook, stirring constantly, until cheese is melted.
  • Pour cheese mixture over broccoli.
  • Cover with crushed Ritz crackers and melted butter, mixed.
  • Sprinkle over top of casserole.
  • Bake at 350° for 20 to 30 minutes.
