Ingredients
- 4 c. fresh broccoli florets (about 1 1/2 lb. Fresh)
- 1/2 medium purple onion, chopped
- 1/2 c. raisins
- 1/2 c. pecan pieces
- 3/4 c. low-fat mayonnaise
- 1/4 c. sugar
- 1 1/2 Tbsp. white vinegar
- 1 (11 oz.) can mandarin oranges, drained
Method
- Combine first four ingredients in a bowl; set aside.
- Combine low-fat mayonnaise, sugar and vinegar, add to broccoli mixture. Stir gently to coat.
- Carefully stir in mandarin oranges.
- Cover and refrigerate at least 3 hours or overnight before serving.
- (It can be served immediately, but it's better after some refrigeration.)
