Ingredients

  • 4 c. fresh broccoli florets (about 1 1/2 lb. Fresh)
  • 1/2 medium purple onion, chopped
  • 1/2 c. raisins
  • 1/2 c. pecan pieces
  • 3/4 c. low-fat mayonnaise
  • 1/4 c. sugar
  • 1 1/2 Tbsp. white vinegar
  • 1 (11 oz.) can mandarin oranges, drained

Method

  • Combine first four ingredients in a bowl; set aside.
  • Combine low-fat mayonnaise, sugar and vinegar, add to broccoli mixture. Stir gently to coat.
  • Carefully stir in mandarin oranges.
  • Cover and refrigerate at least 3 hours or overnight before serving.
  • (It can be served immediately, but it's better after some refrigeration.)
