- 1 Tbsp. olive oil
- 1 c. chopped onion
- 5 c. chicken broth
- 1 c. chopped tomato
- 1/4 tsp. salt (optional)
- 1/4 tsp. black pepper, coarsely ground
- 1/8 tsp. ground red pepper
- 4 c. chopped fresh broccoli flowerets
- 2 Tbsp. plus 1 tsp. grated Parmesan cheese
Method
- Heat oil in saucepan over medium-low heat.
- Add onion; cover and cook 10 minutes or until tender.
- Add broth and next 5 ingredients; bring to boil.
- Cover, reduce heat and simmer 15 minutes.
- Add broccoli; cover and cook 7 minutes or until rice and broccoli are tender.
