Ingredients

  • 1 Tbsp. olive oil
  • 1 c. chopped onion
  • 5 c. chicken broth
  • 1 c. chopped tomato
  • 1/4 tsp. salt (optional)
  • 1/4 tsp. black pepper, coarsely ground
  • 1/8 tsp. ground red pepper
  • 4 c. chopped fresh broccoli flowerets
  • 2 Tbsp. plus 1 tsp. grated Parmesan cheese

Method

  • Heat oil in saucepan over medium-low heat.
  • Add onion; cover and cook 10 minutes or until tender.
  • Add broth and next 5 ingredients; bring to boil.
  • Cover, reduce heat and simmer 15 minutes.
  • Add broccoli; cover and cook 7 minutes or until rice and broccoli are tender.
