Ingredients

  • 1 cup Olive oil
  • 2 lb Peeled garlic
  • 3 cup Shaved Parmesan
  • 1/2 cup Distilled vinegar
  • 1 quart Mayonnaise
  • 2 tbsp Worcestershire sauce
  • 1 cup Fresh squeezed lemon juice
  • 1 tbsp Black pepper
  • 2 pinch Kosher salt

Method

  • In metal pan, combine oil and garlic.
  • Bake at 425 until garlic is tender and 7 shades darker.
  • Stirring occasionally.
  • Separate garlic from the oil and add garlic to food processor while still hot.
  • Puree garlic, slowly drizzling oil as needed to puree.
  • Then add Parmesan cheese a little at a time until blended well and has a smooth consistency.
  • While garlic is roasting, combine all dressing items in mixing bowl and mix well.
  • Set aside.
  • Combine roasted garlic puree and dressing and mix well adding black pepper and salt.
  • Taste for proper flavor, bring any questions or concerns to your chef or supervisor.
  • Label, date and place in proper place in the cooler.
