- 1 clove garlic
- 1 squirt anchovy paste
- 2 oz. olive oil (1/4 c.)
- 1/4 tsp. dry mustard
- 2 Tbsp. wine vinegar
- 1 raw egg
- 1/4 tsp. pepper
- 1/2 large lemon juice
- 6 to 8 Tbsp. Parmesan
- 1 head Romano lettuce
- 1 c. croutons
Method
- Mix all ingredients except cheese, lettuce and croutons.
- Let stand 20 minutes.
- Break up Romano in small pieces.
- Add cheese and croutons.
- Toss with dressing.
- Serve immediately.
