Ingredients
- 1 c. chopped onion
- 1/4 c. butter
- 4 c. hot cooked rice
- 2 c. sour cream
- 12 oz. cottage cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 to 2 cans (4 oz. each) green chiles, chopped
- 2 1/2 c. shredded sharp cheese
Method
- Saute onion in butter until tender.
- Combine onion, rice, sour cream, cottage cheese, salt, pepper, chiles and 1 1/2 cups cheese. Pour mixture into 3-quart baking dish and top with remaining cheese.
- Bake at 350° for 40 to 45 minutes.
