Ingredients

  • 1 c. chopped onion
  • 1/4 c. butter
  • 4 c. hot cooked rice
  • 2 c. sour cream
  • 12 oz. cottage cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 to 2 cans (4 oz. each) green chiles, chopped
  • 2 1/2 c. shredded sharp cheese

Method

  • Saute onion in butter until tender.
  • Combine onion, rice, sour cream, cottage cheese, salt, pepper, chiles and 1 1/2 cups cheese. Pour mixture into 3-quart baking dish and top with remaining cheese.
  • Bake at 350° for 40 to 45 minutes.
