Ingredients

  • 1 leek
  • 1 head cauliflower (white)
  • 2 to 3 cloves garlic
  • 3 tablespoons butter
  • ~4-5 cups chicken broth (not low sodium)
  • 1 cup heavy cream
  • salt & pepper to taste
  • 4 to 5 sprigs of fresh thyme (optional)

Method

  • To expedite cooking, finely chop the cauliflower, leeks, and garlic, then saute in butter until leeks are sweated. Add just enough broth to cover all of the ingredients. Bring to a low simmer and cook for 15 minutes. Add the cream. Salt and pepper to taste. Continue cooking until all ingredients are soft, then blend with an immersion blender until smooth. Serve with a garnish of fresh thyme sprinkled on top.
