Ingredients

  • 1/2 lb. bulk sausage (mild to hot)
  • 1 3/4 c. water
  • 1/2 c. quick cooking grits
  • 1 1/2 c. shredded Cheddar or American cheese (6 oz.)
  • 1 egg, beaten
  • 1/2 c. milk
  • 1 tsp. dry parsley flakes
  • 1/8 tsp. pepper

Method

  • Cook sausage in skillet until no longer pink; drain well. Meanwhile, in a large saucepan, bring water to boiling.
  • Slowly add grits, stirring constantly.
  • Cook and stir until boiling again.
  • Reduce heat; cover and simmer about 5 minutes or until water is absorbed and mixture is thick, stirring occasionally. Add 1 cup of the cheese, stirring until cheese melts.
  • Remove pan from the heat.
