Ingredients
- 1 qt. French-cut green beans
- 4 Tbsp. butter
- 3/4 c. finely chopped onion
- 4 Tbsp. flour
- 1/2 tsp. salt
- 1 1/2 c. milk
- 2 c. chopped, cooked ham
- 2 hard-cooked eggs, chopped
- 1 c. shredded Cheddar cheese
- 2 Tbsp. chopped pimento
- 1 Tbsp. chopped parsley
- 1/2 c. herb flavored croutons, slightly crushed
Method
- Cook beans; drain and reserve 1/2 cup liquid.
- In a 2-quart saucepan, melt butter.
- Saute onion.
- Stir in flour and salt until blended.
- Remove from heat; stir in milk and reserved 1/2 cup liquid.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute.
- Remove from heat; stir in ham, eggs, cheese, pimento and parsley.
- Place beans in baking dish and cover with ham sauce. Sprinkle crumbs over top.
- Bake in preheated 350° oven for 20 to 25 minutes.
- Makes 6 to 8 servings.
