Ingredients

  • 1 qt. French-cut green beans
  • 4 Tbsp. butter
  • 3/4 c. finely chopped onion
  • 4 Tbsp. flour
  • 1/2 tsp. salt
  • 1 1/2 c. milk
  • 2 c. chopped, cooked ham
  • 2 hard-cooked eggs, chopped
  • 1 c. shredded Cheddar cheese
  • 2 Tbsp. chopped pimento
  • 1 Tbsp. chopped parsley
  • 1/2 c. herb flavored croutons, slightly crushed

Method

  • Cook beans; drain and reserve 1/2 cup liquid.
  • In a 2-quart saucepan, melt butter.
  • Saute onion.
  • Stir in flour and salt until blended.
  • Remove from heat; stir in milk and reserved 1/2 cup liquid.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Remove from heat; stir in ham, eggs, cheese, pimento and parsley.
  • Place beans in baking dish and cover with ham sauce. Sprinkle crumbs over top.
  • Bake in preheated 350° oven for 20 to 25 minutes.
  • Makes 6 to 8 servings.
