Ingredients

  • 2 teaspoons cashew butter
  • 2 (1-ounce) whole-grain bread slices
  • 2 ounces thinly sliced grilled pork tenderloin
  • 2 tablespoons caramelized onions
  • 1 tablespoon chopped dried cherries
  • 1/4 cup arugula

Method

  • Spread half of cashew butter on one side of each bread slice. Layer one slice with pork, onion, cherries, and arugula. Top with remaining bread slice, cashew butter side down.
