Ingredients
- 2 teaspoons cashew butter
- 2 (1-ounce) whole-grain bread slices
- 2 ounces thinly sliced grilled pork tenderloin
- 2 tablespoons caramelized onions
- 1 tablespoon chopped dried cherries
- 1/4 cup arugula
Method
- Spread half of cashew butter on one side of each bread slice. Layer one slice with pork, onion, cherries, and arugula. Top with remaining bread slice, cashew butter side down.
