Ingredients
- 1¾ cup plain flour
- ½ cup icing sugar
- 2½ tablespoons cocoa
- 250 g butter, cubed
Topping
- 30 g butter
- ⅓ cup caster sugar
- 1 tablespoon milk
- 1 teaspoon imitation vanilla essence
- ⅓ cup sultanas
- 100 g glacé cherries, chopped
- ¼ cup walnuts, chopped
Method
1. Sift flour, icing sugar and cocoa together into a bowl. Add butter. Rub in using your fingertips, until the mixture resembles coarse breadcrumbs.
2. Press lightly into a greased 18 × 28 cm shallow oblong baking tray.
3. Bake at 200°C for 15 minutes.
4. To prepare topping: Melt butter in a small saucepan. Stir in sugar, milk and vanilla. Remove from heat. Stir in fruit and nuts. Cool slightly.
5. Spread over base. Bake at 180°C for 15–20 minutes. Cut into squares or fingers. Store in an airtight container.
