Ingredients

  • 1 can cream of chicken or 1/2 can cream of chicken and 1/2 can cream of mushroom soup
  • 2 or 3 chicken breasts, boiled until tender and cut into bite size pieces
  • 1 tsp. lemon juice (I add juice of whole lemon)
  • 1 tsp. curry powder (optional; some prefer 1/2 tsp.)
  • grated cheese (optional)
  • 1 pkg. frozen chopped broccoli
  • 1/2 c. mayonnaise (not salad dressing

Method

  • Prepare broccoli as directed on package.
  • Make sauce of soup, mayonnaise, lemon juice and curry powder (if used).
  • Layer chicken, sauce, broccoli and cheese (if desired) in a 9 x 12-inch casserole dish.
  • End with broccoli on top and top with cheese, if desired.
  • Bake at 325° for 25 minutes.
