Ingredients

  • 3 whole chicken breasts
  • 1 tsp. salt
  • 1 small onion, chopped
  • 2 (10 oz.) pkg. broccoli spears
  • 1 to 2 (10 1/2 oz.) cans cream of chicken soup
  • 2/3 c. mayonnaise
  • 1/3 c. evaporated milk
  • 1/2 to 1 c. grated Cheddar cheese
  • 1 tsp. lemon juice
  • 1/2 tsp. curry powder
  • buttered bread crumbs

Method

  • Boil chicken, salt and onion.
  • Cut chicken into bite size pieces.
  • Layer the broccoli, chicken, sauce and bread crumbs.
  • For sauce, mix together soup, mayonnaise, evaporated milk, cheese, lemon juice and curry powder.
  • Bake at 350° for 30 minutes. Serves 6 to 8.
