Ingredients

  • 4 to 5 lb. roasting chicken, cut in serving pieces
  • 4 Tbsp. olive oil
  • 1 large onion, coarsely chopped
  • 1/2 c. flour
  • 1 Tbsp. salt and pepper
  • 2 c. canned tomatoes
  • 2 medium green peppers, chopped
  • 1 clove garlic
  • 1/2 c. chicken broth
  • 1/4 tsp. each: marjoram, oregano, basil and rosemary

Method

  • This is one of the most popular Italian chicken dishes.
  • Put 1/2 of the olive oil in a large casserole over low heat and cook onions until soft.
  • Roll chicken pieces in flour, salt and pepper. Skim out onions and reserve.
  • Add remaining oil to casserole. Brown chicken and return onions.
  • Add tomatoes, pepper, garlic and herbs.
  • Cover closely and simmer over low heat, about 1 hour, or until chicken is very tender.
