Ingredients

  • 4 breast halves, boneless
  • 4 thin slices ham
  • 4 slices Swiss cheese
  • 4 Tbsp. cornstarch
  • 4 Tbsp. butter
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Method

  • Place meat between sheets of plastic wrap.
  • Pound out to 8 or 9 inch diameter with mallet, very thin but no holes.
  • Place 1 slice ham and cheese on bottom half, fold over other half.
  • Press edges to seal.
  • Cover with wrap.
  • Pound lightly.
  • Sprinkle cornstarch on wrap. Lightly coat meat on both sides.
  • Over high heat, melt butter.
  • Add chicken pieces.
  • Cook 3 minutes on each side until meat is tender and golden.
  • Do not overcook.
  • Sprinkle with salt and pepper.
