- 1 medium and 1 small onion, chopped
- 2 Tbsp. oil
- 1 (29 oz.) can tomato puree
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 to 2 tsp. curry powder
- 1/2 tsp. ground cumin
- 1/2 tsp. ground oregano
- 4 chicken breasts, poached in water to doneness, deboned and pulled apart with a fork
- 1 small can black olives, chopped
- 1 small can green chilies, chopped
Method
- In a medium saucepan, saute onion in oil until tender.
- Add tomato puree and spices and mix well.
- Cook on medium heat for 3 to 4 minutes.
- Set aside.
