Ingredients
- 3 chicken breasts, cut in half lengthwise and deboned
- salt and pepper
- chopped spring onion
- parsley
- butter
- flour
- beaten egg with water added
- crumbled corn flakes
Method
- Pound breasts out flat; sprinkle with salt, pepper, onion and parsley (very few).
- Place strip of butter on narrow end of chicken; roll.
- Cover each breast with flour; shake off.
- Dip in beaten egg (with water added), then roll in crumbled corn flakes. Chill one hour (or may be stored in refrigerator for several hours if desired).
- Deep fry each piece 5 to 10 minutes just before serving time.
- Serves 6.
