Ingredients

  • 3 chicken breasts, cut in half lengthwise and deboned
  • salt and pepper
  • chopped spring onion
  • parsley
  • butter
  • flour
  • beaten egg with water added
  • crumbled corn flakes

Method

  • Pound breasts out flat; sprinkle with salt, pepper, onion and parsley (very few).
  • Place strip of butter on narrow end of chicken; roll.
  • Cover each breast with flour; shake off.
  • Dip in beaten egg (with water added), then roll in crumbled corn flakes. Chill one hour (or may be stored in refrigerator for several hours if desired).
  • Deep fry each piece 5 to 10 minutes just before serving time.
  • Serves 6.
