Ingredients
- 3 lb. chicken, cut up
- 5 Tbsp. vegetable oil
- 4 shallots, chopped
- 1 c. cranberry vinegar
- 4 Tbsp. cranberry jello
- 1 Tbsp. butter
Method
- In oven proof skillet, heat oil and lightly brown all the chicken.
- Cover and bake in preheated 425° oven for 25 minutes. Place chicken on platter.
- Keep warm.
- Saute shallots in same pan. Deglaze pan with vinegar, whisk in cranberry jelly and butter. Serve over chicken.
