Ingredients

  • 1 lb. hot Italian sausage
  • 1 clove garlic, minced
  • 1 c. onion, chopped
  • 1 large can tomato sauce
  • 1 large can chili beans
  • 1 small can Ro-Tel tomatoes with green chilies
  • 1 1/2 tsp. salt
  • 1/2 tsp. celery salt
  • 1 1/2 Tbsp. chili powder
  • 1/8 tsp. thyme
  • 1/8 tsp. marjoram
  • few grains cayenne pepper
  • water

Method

  • Chop up Italian sausage with fork in frying pan.
  • Saute until it turns brown.
  • Add onion and garlic.
  • Saute until onion is transparent.
  • Drain mixture on paper towels.
  • Pat with towels on top to absorb grease.
  • Put mixture in soup pan; add rest of ingredients, including spices.
  • Simmer for 1 1/2 to 2 hours, adding water as needed.
