Ingredients
- 10 lb. cleaned chitterlings
- 1 large chopped onion
- seasoning salt to taste
- black pepper
- 3 cloves chopped garlic (optional)
- dry red or cayenne pepper to taste
Method
- Cook chitterlings slowly until almost tender.
- Pour off most of liquid.
- Add onion, garlic and salt and pepper to taste. Continue to cook until tender or can be cut with a fork.
