Ingredients
- 2 1/2 c. unsweetened shredded coconut
- 1 tbsp. plus 2 tsp. cornstarch
- 3/4 c. sugar
- 2 tbsp. butter, cut in pieces
- 1/4 c. light corn syrup
- 1 tsp. vanilla
- 1/4 tsp. salt
- 2 egg whites lightly beaten
- 5 oz., about 1 c., semisweet or Merken's wafer dark chocolate
Method
- Preheat oven to 375°. Butter and flour baking sheet.
- In med. bowl combine coconut and cornstarch, set aside.
