Ingredients

  • 2 1/4 cups gluten-free all-purpose flour
  • 2/3 cup rice flour
  • 1/2 cup granulated sugar
  • 1 tbsp orange zest
  • 1 cup butter, chilled and cubed
  • 6 oz dark chocolate, melted

Method

  • Preheat oven to 325°F. Line 2 baking trays with parchment paper. Process flour, sugar and zest until combined. Add butter and process until mixture just comes together. Turn out onto a lightly floured surface and knead until smooth. Roll out between 2 sheets of parchment paper until 1/3 inch thick then cut out 2 inch discs. Transfer to prepared trays and bake for 30 mins, or until light golden. Let cool on trays. (Can re-roll scraps.)
  • Dip 1/2 of each cooled cookie into chocolate to coat, letting excess run off. Place on a baking tray lined with parchment paper to set.
