Ingredients

  • 5 eggs
  • 2 1/2 c. hash browns
  • 1/2 c. cottage cheese
  • 1 1/2 c. shredded swiss cheese
  • 1/3 c. milk
  • 1 tsp. salt
  • 8 slices crumbled bacon
  • 1/8 tsp. pepper
  • 1 Tbsp. bacon fat
  • 2 chopped green onions
  • 1/2 c. corn flake crumbs

Method

  • Beat eggs until foamy.
  • Stir in hash browns, cheese, milk, onions and seasoning.
  • Pour into 9 inch pie tin.
  • Cook bacon until crisp.
  • Save 1 Tbsp. of fat.
  • Crumble bacon over egg mixture. Combine cornflakes and bacon fat.
  • Sprinkle over egg mixture. Cover and refrigerate over night.
  • Bake uncovered at 325 degrees for 50 minutes or until golden brown.
