- 5 eggs
- 2 1/2 c. hash browns
- 1/2 c. cottage cheese
- 1 1/2 c. shredded swiss cheese
- 1/3 c. milk
- 1 tsp. salt
- 8 slices crumbled bacon
- 1/8 tsp. pepper
- 1 Tbsp. bacon fat
- 2 chopped green onions
- 1/2 c. corn flake crumbs
Method
- Beat eggs until foamy.
- Stir in hash browns, cheese, milk, onions and seasoning.
- Pour into 9 inch pie tin.
- Cook bacon until crisp.
- Save 1 Tbsp. of fat.
- Crumble bacon over egg mixture. Combine cornflakes and bacon fat.
- Sprinkle over egg mixture. Cover and refrigerate over night.
- Bake uncovered at 325 degrees for 50 minutes or until golden brown.
