Ingredients

  • 1/2 cups Unsweetened Applesauce
  • 2 Tablespoons Maple Syrup, Sugar Free
  • 1 teaspoon Vanilla Extract
  • 1 cup Gluten-free Oats, Ground
  • 1/2 cups Gluten Free Oats
  • 1/2 teaspoons Cinnamon
  • 1/4 teaspoons Baking Soda
  • 1/4 teaspoons Baking Powder
  • 1/4 teaspoons Salt
  • 1/3 cups Raisins

Method

  • Preheat oven to 350°F. Line baking sheet with parchment paper or Silpat; set aside.
  • In a large bowl add applesauce, maple syrup and vanilla extract. Mix until combined. Add oat flour, oats, cinnamon, baking soda, baking powder and salt; mix until combined.
  • Fold in raisins.
  • Take a heaping tablespoonful of batter (I used a large cookie scoop) and place on cookie sheet, about 1 1/2" apart. The cookies do not spread. I carefully flattened the top of the cookies with a back of a spoon, but it is not necessary.
  • Bake for 10-12 minutes or until bottom is lightly golden.
