Ingredients

  • 1 cup sugar
  • 1 cup water
  • 4 cinnamon sticks
  • 1 small, firm apple, cored and sliced into 1/2-inch rings
  • fresh-squeezed lime or lemon juice
  • white rum

Method

  • Prepare cinnamon-apple sugar syrup:
  • Stir sugar, water, and cinnamon together in a 1-1/2 or 2 quart saucepan. Bring to a boil, stirring occasionally. Reduce heat to a simmer, stirring until all sugar is dissolved. Simmer 10 minutes longer. Add apple slices and simmer, stirring occasionally to ensure apple slices are covered in syrup, until apples are cooked, approx 10 minutes. Turn off heat and allow to cool. Store cinnamon and apple in the syrup.
  • To make cocktails:
  • For each daiquiri, mix 1 jigger syrup, 1 jigger lime or lemon juice and 2 jiggers rum in an ice-filled shaker. Cover and shake thoroughly. Strain into a cocktail glass that has been rimmed with sugar. Float a very thin slice of lime or lemon on top as garnish.
