Ingredients
- 3 1/3 lbs ripe tomatoes, peeled and chopped
- 1/2 cup white wine vinegar
- 1/2 cup raisins
- 1 large onion, chopped
- 1 clove garlic, chopped
- 1 tbsp salt
- 4 None whole cloves
- 1/2 tsp cayenne pepper
- 1/3 cup granulated sugar
Method
- Mix all ingredients, except sugar, in a large saucepan. Cook on medium-high heat, stirring, until mixture comes to a boil. Reduce heat to low and simmer for 11/2 hours, stirring occasionally, until tomatoes softens.
- Add sugar; stir until dissolved. Bring to a boil. Cook for 20-25 mins, stirring frequently, until mixture thickens.
- Pour chutney into hot sterilized jars; seal immediately. Store in a cool, dry place for up to 3 months. Keep in the refrigerator after opening.
