Ingredients

  • 5 lb. potatoes (about 9 large)
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. sour cream
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter

Method

  • Cook peeled potatoes in boiling water until tender and drain. Mash until smooth.
  • Add remaining ingredients until light and fluffy.
  • Cool.
  • Cover and refrigerate.
  • They may be used anytime within 2 weeks or freeze.
  • To use, place desired amount in greased casserole dish.
  • Dot with butter and bake covered in 350° oven for 30 minutes.
  • Serves 12.
