Ingredients
- 1/2 cup, plus 2 tablespoons, wild rice
- 1 tablespoon butter
- 6 tablespoons finely chopped onion
- Salt to taste, if desired
- Freshly ground pepper to taste
- 2 cups water or chicken broth
Method
- Rinse and drain the rice.
- Heat the butter in a saucepan and add the onion.
- Cook until the onion is wilted.
- Add the rice and stir.
- Add salt and pepper to taste.
- Add the water or chicken broth and bring to the boil.
- Cover closely and let simmer 30 to 45 minutes or until the rice ''blooms'' and is tender.
- Cooking time will vary due to grain size and moisture content.
