Ingredients

  • 1/2 cup, plus 2 tablespoons, wild rice
  • 1 tablespoon butter
  • 6 tablespoons finely chopped onion
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • 2 cups water or chicken broth

Method

  • Rinse and drain the rice.
  • Heat the butter in a saucepan and add the onion.
  • Cook until the onion is wilted.
  • Add the rice and stir.
  • Add salt and pepper to taste.
  • Add the water or chicken broth and bring to the boil.
  • Cover closely and let simmer 30 to 45 minutes or until the rice ''blooms'' and is tender.
  • Cooking time will vary due to grain size and moisture content.
