Ingredients
- 1 c. flour
- 1 c. cornmeal
- 2 to 4 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. milk
- 1/4 c. cooking oil
Method
- In one bowl, combine dry ingredients.
- In another bowl, combine liquids and eggs.
- Add flour mixture to liquids and stir just until batter is smooth.
- Do not overbeat.
- Pour into a greased 9 x 9 x 2-inch pan.
- Bake at 425° for 20 to 25 minutes or until golden brown.
- Yield:
- 8 or 9 servings.
