Ingredients
- 2 oz. bacon
- 1 small onion, chopped
- 2 1/2 c. or 1 (No. 2) can whole grain corn
- 1 1/2 c. diced tomatoes
- 2 c. diced potatoes
- 1 tsp. salt
- 1 Tbsp. sugar
- dash of pepper
- 1 qt. boiling water
- 1 c. evaporated milk
Method
- Cut bacon in small pieces and fry slowly to a golden brown in a large saucepan. Add onion and cook slowly without browning for 5 minutes. Add corn, potatoes and tomatoes in alternate layers. Sprinkle with salt, sugar and pepper, then add water.
- Cook slowly until potatoes are tender.
- Remove from heat and stir milk in slowly. Serves 6 to 8.
