Ingredients

  • 2 oz. bacon
  • 1 small onion, chopped
  • 2 1/2 c. or 1 (No. 2) can whole grain corn
  • 1 1/2 c. diced tomatoes
  • 2 c. diced potatoes
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • dash of pepper
  • 1 qt. boiling water
  • 1 c. evaporated milk

Method

  • Cut bacon in small pieces and fry slowly to a golden brown in a large saucepan. Add onion and cook slowly without browning for 5 minutes. Add corn, potatoes and tomatoes in alternate layers. Sprinkle with salt, sugar and pepper, then add water.
  • Cook slowly until potatoes are tender.
  • Remove from heat and stir milk in slowly. Serves 6 to 8.
