Ingredients

  • 2 Cornish hens
  • 12 cup soft butter
  • 1 teaspoon minced garlic
  • 1 teaspoon minced onion
  • 2 teaspoons parsley
  • 1 teaspoon salt
  • 1 12 cups brown sugar
  • 2 teaspoons cornstarch
  • 3 cups water
  • 3 oranges, juice of

Method

  • Preheat oven to 375F degrees.
  • Rub hens with butter.
  • Mix next 4 ingredients and sprinkle evenly over hens.
  • Place on rack in baking pan.
  • Bake for 45 min, covered with a foil tent.
  • Make orange sauce--------------.
  • Combine sugar and cornstarch.
  • Mix well.
  • Add water and juice.
  • Cook and stir to a boil.
  • Cook for 2 minutes.
  • Pour half over hens, and bake hens another 15 minutes.
  • Baste once or twice.
  • Serve remaining sauce with hens.
