Ingredients

  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. sugar
  • 3 Tbsp. softened butter
  • 3/4 c. orange juice
  • 1 egg
  • 1 Tbsp. grated orange rind
  • 1/2 tsp. almond extract
  • 1 c. chopped cranberries

Method

  • Combine first 5 ingredients in a bowl.
  • Preheat oven to 350°. Mix wet ingredients in mixing bowl.
  • Stir in dry ingredients. Fold in cranberries.
  • Spoon into greased and floured 8 x 4 x 3-inch loaf pan.
  • Sprinkle sugar on top.
  • Bake 1 hour or until done.
  • Cool for 5 minutes.
  • Remove from pan and cool on rack.
